Ancho chili peppers are the dried version of the mildly spicy poblano, a dark green pepper slightly smaller than a bell pepper. To grind ancho peppers, tear them open and shake out the seeds. Remove the stems, then use a coffee grinder or spice grinder to grind them to a fine powder.
