I don’t know about you, but we have been eating a lot of salads this summer. It is hot and we have been in the mood for lighter fare. I am always on the lookout for a new salad to try and I recently came across this Cucumber-Honeydew Salad with Feta on BHG. I told my husband, Josh, to add honeydew melon to the grocery store list because I wanted to make it immediately.
Josh picked out a perfect honeydew melon. It was juicy, sweet, and had a fresh melon scent! I need to send him to the grocery store more often. I removed the seeds for the salad and cut it into bite sized chunks.
I also chopped up cucumber, red onion, and fresh dill for the salad.
The salad has a simple dressing made up of olive oil, lemon juice, honey, and salt and pepper. I put all of the ingredients in a jar and shook it up-an easy and fun way to make homemade salad dressing.
I combined all of the salad ingredients in a large bowl and drizzled the dressing over the top. I sprinkled in the feta cheese and gave the salad a good stir. The salad was beautiful! I loved the different shades of green.
I served the salad for dinner and it was a hit! I loved the sweet and juicy melon and crisp cool cucumbers together. The red onion and dill added nice flavor and freshness. The feta cheese finished the salad with the perfect amount of saltiness. This salad is a winner. I know we will be making it all summer long. It is simple to make and a great side dish for any summer meal.
