Goldilocks Potatoes

Hi! I’m Stephanie, the girl behind I am a Food Blog. I love food, photography, and all things cute! I am a Food Blog is where you’ll find me whipping up dishes inspired by my favorite restaurants, takeout, or just whatever’s in my fridge.

It’s the middle of fall and I’m loving it! With cold, sunny days and the hint of winter in the air, I find myself craving cozy, comforting recipes that will warm me up from the inside out. I’m talking about hearty braises, steaming stews, and anything potato-based.

I am a potato lover through and through and have been known to make a big batch of mashed potatoes to eat as dinner. Not the most exciting meal, but definitely super-comforting and delicious. When I found the BHG Goldilocks Potatoes I was just a bit (okay, a lot!) excited. Essentially, they’re fluffy mashed potatoes topped with softly whipped cream and cheddar.

I made a couple of changes from the original recipe:
1. Into the mashed potatoes, I stirred in some roasted garlic, crispy bacon, shredded cheddar and green onions.
2. I added extra cheese on top of the whipped topping.

I loved the way these potatoes turned out – almost like baked potato soup, but even more comforting, if that’s even possible! The whipped topping melted down in the potatoes so keep that in mind – you don’t need too much milk or butter in your mashed potato base. I made these in tiny individual cups, which would be perfect as an appetizer for all of those holiday parties coming up. You can prep all of the cups, keep them in the fridge and bake them off as needed, because who doesn’t love a cup full of comfort?

Friday Finds 10.17

With the weather cooling down, I’m all about cozy-ing up with a hot bowl of pasta! Pasta to me will always be the perfect comfort food. So get comfy, tuck in, and get ready for some really incredible ways to celebrate that nip in the air.

I’m all about a creamy sauce on pasta. I cannot wait to try this Pasta with Pancetta and Vodka Sauce! Just a Taste’s Kelly says to not skimp on the vodka you use. Don’t cook with anything you wouldn’t drink!

Mel’s Kitchen Cafe brings the flavor in this super easy Creamy Tuscan Pasta Sauce. And when I say super easy, I mean it is done in 20 minutes, perfect for a weekly dinner!

Nothing is quite as cozy as a pasta bake. I can’t wait to try Gimme Some Oven‘s Chicken Alfredo Baked Ziti. Ali says it is picky-eater friendly!

Can there be anything more comfort-food perfect than a French Onion Stroganoff? Host the Toast doesn’t think so! You’ll love these cheesy and oh-so creamy recipe.

Your whole family will adore Cooking Classy‘s Creamy Broccoli Chicken Shells and Cheese. I always eat my veggies with a side of cheese, don’t you?

Friday Finds 7.18

Hello, hello! Glad to be back here bringing Delish Dish my favorite Friday Finds! Every time I tell someone what I do at BHG, I joke that I get to look at pretty pictures of food all day. And then I realize I’m not joking at all! Every week the blogosphere amazes me with their creativity. So in honor of National Ice Cream Day tomorrow (yes it is a real thing), I found some super creative ice cream sandwich treats for you to try!

Dessert for Two brings together one of the best flavor combos with these incredible Spiced Chocolate Strawberry Ice Cream Sandwiches!

Hold the phone. Did Club Narwhal say Dulce de Leche Ice Cream Waffle Sandwiches? I’ll take 20 please.

I admit, I can do a lot of damage to a box of chocolate ice cream sandwiches. But can we quick talk about how The Girl Who Ate Everything managed to make them even better in her Ice Cream Sandwich Cake? Holy buckets.

If you’re a regular reader, you know how much I love pie. And when I saw these Blueberry Pie Ice Cream Sandwiches from The Kitchen McCabe I immediately started singing “My Favorite Things” from Sound of Music. You mean you don’t know the verse about Blueberry Pie Ice Cream Sandwiches? That’s just me? Okay, fine.

Since I was taught to eat more than my fair share of cookie dough, when I saw that Mel’s Kitchen Cafe whipped up some Chocolate Chip Cookie Dough Ice Cream Sandwiches I freaked out. You heard that right, the cookie part of the sandwich is egg-free cookie dough!

Friday Finds 6.20

Did you know that summer doesn’t officially start until tomorrow? I don’t know about you guys, but it seems like summer has been here for a while! To celebrate the official start to summer on June 21, I thought I’d share with you some of my favorite ice cream treats I’ve been finding. You’ll be sure to cool off with these yummy desserts!

Handmade Charlotte combines my favorite meal (breakfast!) with some delicious ice cream accents! Try these Waffle Ice Cream Sandwiches as a super easy dessert for any occasion.

Nothing is quite as satisfying as a fruity dessert at the end of a long, hot summer day! Will Cook for Smiles brings the flavor in this cocktail-inspired Strawberry Mojito Pops.

Who doesn’t love a summertime bonfire? Heather’s French Press combines our favorite s’more bonfire flavors in her Toasted Marshmallow Ice Cream with Fudge and Graham Swirls. I cannot wait to try this one!

Popsicles for breakfast? No way! But Mom on Timeout figures out a way to start your summer morning on the right note with these Blueberry Breakfast Parfait Pops.

I like pina coladas and getting caught in the rain! Turmeric N’Spice had me singing that song all day because of this incredible Pina Colada Sorbet.

Strawberry Pavlova with Mint

Growing up I hated strawberries with a passion. I have no idea why. Actually, most fruit {with the exception of bananas} was on my “do not eat” list. Then after I got married, had a baby and couldn’t eat chocolate or dairy, I became a little more open to fruit. {My little one had a sensitive tummy.} I started trying apples, cantaloupe and pineapple. I eventually expanded my horizons to *gasp* berries and loved them! Shocking, I know.

Since then, strawberries have always been at the top of my shopping list, especially in the summertime! Strawberries are so incredibly sweet and juicy when they’re in season. When I saw a recipe for this Strawberry Pavlova with Mint in the newest Better Homes and Garden cookbook Fresh, I knew I had to make it.

Pavlova is a pillow of baked meringue, topped with whipped cream and fruit. If you’ve never had pavlova before, you’re really missing out on something delicious not to mention really simple!

This specific recipe calls for homemade sweetened meringue that is baked and topped with lightly whipped cream and creme fraiche.

Finish it off with lots of strawberries and mint and that is one gorgeous, light summer treat.
