Hi folks, this is Gina from Skinnytaste sharing a delicious appetizer recipe for Bruschetta made with fresh and sun-dried tomatoes, grated feta and fresh herbs.
Superbowl is around the corner and this easy appetizer would be a great addition to your game day table! This is perfect for the winter when tomatoes aren’t at their peak; you can make it ahead and assemble when guests arrive.
I used a little less olive oil than the original called for to brush on the baguette before toasting, and used the remaining oil to drizzle it on top.
This was delicious and I had enough topping to make at least 10 toasts.
If you need more appetizer ideas you can visit my blog, Skinnytaste.com or get your hands on The Skinnytaste Cookbook; Light on Calories, Big on Flavor. The book has 150 recipes, everything from breakfast to dessert! Some of the appetizers I’ll be making for the Superbowl from the book… Guiltless Sausage Stuffed Mushrooms, Caliente Bean and Queso Dip, Loaded “Nacho” Potato Skins… Just to name a few!
I’ve really had a fun month guest posting here on Delish Dish, thank you for having me!
