Hi folks, this is Gina from Skinnytaste sharing a delicious appetizer recipe for Bruschetta made with fresh and sun-dried tomatoes, grated feta and fresh herbs.

Superbowl is around the corner and this easy appetizer would be a great addition to your game day table! This is perfect for the winter when tomatoes aren’t at their peak; you can make it ahead and assemble when guests arrive.

I used a little less olive oil than the original called for to brush on the baguette before toasting, and used the remaining oil to drizzle it on top.

This was delicious and I had enough topping to make at least 10 toasts.

Gina from Skinnytaste here, excited to share this easy appetizer recipe that my husband LOVED!

This recipe is really simple, I almost followed the recipe exact with a few exceptions. I used part skim mozzarella instead of fresh mozzarella which I shredded, and I reduced the amount of mozzarella to 2 ounces instead of the 3 ounces the recipe calls for.

The recipe starts with frozen puff pastry which you cut into 9 circles and bake until golden and puffed.

Then you top it with parmesan cheese, mozzarella and tomato and bake until hot. Finish with basil and you have yourself these delicious mini tarts that taste like little pizzas. Perfect appetizer for the Superbowl, you can easily double it for more servings – enjoy!

Hi, I’m Gina from Skinnytaste and I’m so excited to be a part of the BHG Delish Dish “Month of Healthy Snacks”. Today I’m sharing these great mini meatballs, a perfect appetizer recipe for the weekend if you’re watching the game!

These meatballs start on the stove, or you can even bake them in the oven, then finish in the slow cooker. Once done, you pour the Honey-Lime sauce over them and watch them disappear. They are a little spicy, sweet and salty – a winning combination!

I adapted the recipe from these Molasses-Lime Meatballs. Since I didn’t have molasses I used honey instead and reduced the amount to 1/4 cup which was plenty. I got about 60 meatballs, which could easily serve 15 (4 each) with other finger foods.

Hi, I’m Gina from Skinnytaste and I’m so excited to be a part of Better Homes and Gardens Delish Dish “Month of Healthy Snacks” And I can’t think of a healthier snack, than guacamole! We make guacamole a lot in my house, so I’ve taken this Crab Guacamole recipe and added my own spin to it.

Adding crab to ordinary guacamole gives it a tropical flair, and it’s a great way to add lean protein which keeps us satisfied longer. I love using black bean chips like Beanitos, but any baked chip is great.

The original recipe calls for sour cream, but I find avocado is creamy enough on it’s own so I omitted it. I also added some chopped red onion and minced seeded jalapeño for kick. And because I like a lot of lime in my guac, I used a whole lime. The results were DELISH!

Hi Guys! I’m Gina from Skinnytaste and I’m so excited to share this delicious Salsa Verde recipe with you all. Once you try this, you’ll never buy it from a jar again! I love salsa verde whether I eat it with chips, use it to make enchiladas, or use it to make the easiest slow cooker chicken recipe ever, Salsa Verde Chicken.

With Super Bowl right around the corner, I was looking for some fresh, healthy dip ideas and came across this video for Salsa Verde on Better Homes and Garden’s website. This was super easy to do and tasted amazing with baked chips.

This is real simple to make. You basically roast all the peppers and tomatillos in the oven, then peel and seed the chile peppers. Combine it with cilantro, onions and garlic and pulse a few times int the food processor. The only change I made to the recipe was I used less water, 5 tablespoons was enough. This made 1 3/4 cup.

Spaghetti squash is my favorite low-carb pasta substitute, and it’s so easy to make. Although you can roast it in the oven for an hour, I prefer to pierce it all over and microwave it – only takes 7 to 8 minutes!

Just a few weeks ago I made a Spaghetti Squash Primavera, which turned out amazing, so  when I came across this Spaghetti Squash with Arugula Pesto side dish, I was all over it. You can double the portions and have it as a meatless main dish – all for under 300 calories.

The only change I made to the original recipes was swapping the Parmesan cheese, for shredded Pecorino Romano which is what I had on hand. This was quick and easy, and the red pepper flakes gave this dish a little zing! I will certainly be making this one again!
