Howdy! I am Natasha, author of I am a Ukrainian foodie living in Idaho, so it’s only fitting that I share a potato recipe ;). You will love these smashed potatoes! The recipe is easy, so full of flavor and quite addictive! I ate three “samples” just as soon as they came out of the oven. They taste like gourmet camping potatoes. That salty crisp skin, tender creamy inside and cheesy herb crust; Mmmm. My husband was completely smitten by these and my son especially appreciated the melted cheese!

The days are getting longer and warmer, kids are finishing up school, and farmers markets are bustling with folks looking for the freshest seasonal produce like these new red potatoes and fresh herbs. The farmers market is actually a great place to get inspired for dinner. Buying local, in season produce ensures you will have the highest quality ingredients and best tasting meal.

  5. As always Natasha, you come up with a dish that is appealing to the eye, easy to make, and tastes fantastic. Showed the wife, and she said make sure that I pick-up some red potatoes when I was out today. So I we had a late lunch of these about a hour ago.

  6. I have to ask, when does the frying come in. How do the potatoes get crispy skin? Do you actually fry them? Your directions show the only cooking is the boiling at the beginning. Would love to try these, but cannot understand how you reach the end product.
