Greek Spinach – Tortellini Salad

Greek cuisine happens to be one of my all time favorites. The bold flavors, the tongue-twisting names of all their delicious dishes… how can one not fall in love?

I was searching for a quick and easy salad to make in BHG’s extensive database of recipes, and came across this Greek Spinach-Pasta with Feta and Beans. I knew instantly that I wanted to make it. The ingredients reminded me of my favorite Greek Spinach Pie but in the form of a delightful lunch (or dinner). The bonus part, was that this salad came together in less than 15 minutes. Seriously!

Greek Spinach-Tortellini Salad

In order to streamline the recipe, I switched out the dry pasta with a fresh cheese-filled tortellini. Since it’s a fresh pasta it just takes a few minutes in boiling water to cook to that perfect al dente. That simple switch turns this green salad from a side dish into a main meal, if you ask me!

Greek Spinach-Tortellini Salad

The original recipe calls for fresh oregano and thyme, which is very traditional with Greek cuisine. All the Greek recipes I know and love are always bursting with gorgeous herbs, but one herb that I felt this salad needed was fresh dill.

Oh how I love dill.

I added a tablespoon of fresh snipped dill to the salad and it was simply perfect!

The recipe also calls for a can of Great Northern Beans, which would be a great way to up the protein, but I didn’t have any on hand so I just left them out. Next time I make this salad I’ll try it with the beans. Overall, it’s a fantastic recipe that has some great flavors thanks to the fresh lemon and aromatic herbs. You’ll love this salad with or without my modifications!

Here are the modifications I made to the original recipe:

  • Switch out the dry pasta for 9oz. of fresh cheese-filled tortellini (cooked according to package instructions)
  • Added 1 tablespoon of fresh snipped dill
  • I omitted the Great Northern Beans
