Cheesy Slow Cooker Mashed Potatoes
What’s your favorite Thanksgiving dish? Raise your hand if you’re like me and love mashed potatoes! I have to admit my most favorite thing about Thanksgiving is the side dishes and then the day after, the leftover side dishes.
When I saw these Rustic Garlic Mashed Potatoes made in a slow cooker, yes I said slow cooker…I had to try them! I didn’t think that you could improve on the most perfect mashed potatoes but you can. Because when you’re making Thanksgiving dinner, you run out of room to cook things. I know I do. So making your potatoes in a slow cooker is pretty genius! That frees up space on the stove and you can even keep them warm in the slow cooker.
I wanted to make my own twist on them so I made them with tons of sharp cheddar cheese. Cheesy potatoes are my absolute favorite!
Peel and rinse the potatoes and then cut them into chunks.
Cook them in the slow cooker for 3 to 4 hours on low. Drain them but reserve the liquid in case you need to add it back and mash them.
Add butter, milk (I only used 1/2 cup milk) and 1/3 cup sour cream. Have you tried making mashed potatoes with sour cream before? You should definitely try it!
Add 1 cup of cheddar cheese and mix. Top with another 1/2 cup of cheese when serving.
Cheesy potatoes…two of my favorite ingredients together. You should definitely try this technique for your Thanksgiving meal, I’m definitely going to!
I used the recipe for Rustic Garlic Mashed Potatoes and used regular low sodium chicken broth and also changed the following: I used 1/2 cup milk instead of 3/4 cup, added 1/3 cup sour cream alongside the milk, a dash of nutmeg and 1 1/2 cups sharp cheddar cheese!
Time saving tip: Make the potatoes in your slow cooker a day ahead. Store them in your refrigerator overnight and just reheat when you’re ready to serve!
