If you love coconut and you love caramel. You are in for a good time. Okay, I know it’s only a cookie—but really—this is pretty rad. There are many recipes pairing the two flavors, but none that I’m familiar with in this same manner, but admittedly, I also did not Google it. I’m pretty sure when I do, there it will be—Salted Caramel Macaroon Thumbprint Cookies.
Until we check, lets talk about how easy this is to make. To start, prepare the macaroon recipe as instructed here. To flatten them out as I have done, use the back of a spoon lightly covered with non-stick bake spray and press each cookie flat before baking.
Once baked, create a slight well at the center of the macaroon cookie and fill it with caramel sauce and then finish with a sprinkle of fleur de sel or drizzle with some melted chocolate on top of the caramel first then with fleur de sel.
**You will have more caramel sauce than you need, so store the what you don’t use according to the recipe instructions.
