It’s that time of year again! Parties for cuddly babies and blushing brides always seem to pop up in the spring and early summer, and I’m always on the look out for fun, finger-friendly foods that I can make for the occasion.
Cucumber Burrata Sandwiches are perfect for either a baby or bridal shower. Easy to assemble and serve, these 2-bite tea sandwiches are deliciously light and crisp. Yummy for baby shower guests, and dainty enough for the bride and her maids to enjoy as well.
Whole wheat bread is layered with creamy burrata cheese then topped with thin slices of refreshing cucumber and spicy radish, and then finished with a drizzle of extra virgin olive oil, salt, and pepper.
Cut the crusts off then slice into thirds for the perfect nibble. Your guests will just love these yummy bites!
The best part, besides the delicate flavor of these sandwiches, is that there’s only 4 main ingredients: whole wheat bread, burrata cheese, cucumber, and radish.
Start with the burrata cheese, which is a fresh mozzarella ball stuffed with shredded mozzarella that’s been mixed with cream. Translation: insanely delicious. Think spreadable mozzrella.
Spread a layer of the burrata cheese onto a slice of bread (cut crusts off either before or after assembling the sandwich. I found it a bit easier to do it before.) If you can’t find burrata cheese in your area, any spreadable cheese like Boursin or Laughing Cow would be a good substitute!
Next top with thin slices of cucumber and radish. I just loved the cool and spicy crunch of these two against the creamy, decadent burrata cheese. So good!
Drizzle with a bit of extra virgin olive oil, then sprinkle with salt and freshly cracked black pepper, then cut the sandwiches into thirds or squares, or cut on the diagonal, and serve.
