Usually when squirrels chew on bark, they're going after the sweet sap. You can use a repellent sprayed on the plant to keep them away. If it's a large tree, you may not be able to reach the top of the tree with the spray, but fortunately the damage that they do is usually temporary and on a well-established tree won't cause permanent injury.
