Can I substitute brown sugar for white sugar in baking recipes to make them healthier? What is the difference in cooking time or doneness (with the brown sugar in muffins-it seems 'wetter' when finished baking.) Thank-you, P. Tognetti

You can use brown sugar interchangeably in most recipes, but note that it does not make them any healthier. Brown sugar is a little moister and contains a bit of molasses, so may change the texture and flavor a bit of the baked good, but sweetness level will be the same. Your doneness test will also be the same, though the color may be slightly darker.
