You can use brown sugar interchangeably in most recipes, but note that it does not make them any healthier. Brown sugar is a little moister and contains a bit of molasses, so may change the texture and flavor a bit of the baked good, but sweetness level will be the same. Your doneness test will also be the same, though the color may be slightly darker.
