Place beef in a shallow roasting pan. Insert meat thermometer. Roast, uncovered, in a 350°F. oven for 2-1/2 to 3 hours for medium-rare after 15 minute standing time, or 3 to 3-1/2 hours for medium doneness after standing time. Cover with foil, if necessary, during the last half of roasting.
