How do I cook a New York-style roast to have it turn out medium rare?

I'mm fixing a 9-pound beef rib roast for a dinner party this weekend. It is "New York" style. What temp and time to cook to have it turn out med rare in the middle?

Here are the timings from our beef roasting chart for a 9-pound beef rib roast:

Place beef in a shallow roasting pan. Insert meat thermometer. Roast, uncovered, in a 350°F. oven for 2-1/2 to 3 hours for medium-rare after 15 minute standing time, or 3 to 3-1/2  hours for medium doneness after standing time. Cover with foil, if necessary, during the last half of roasting.
