You are right, you don’t get the nice drippings when this cooking method is used. Here is a recipe using canned broth (chicken or turkey broth will work). Enjoy!
Start to Finish: 15 minutes
Makes: 3 cups
1/3 cup butter
1/3 cup all-purpose flour
3 cups chicken broth
1/4 teaspoon ground black pepper
Coarse kosher salt or table salt
Fresh parsley (optional)
1. In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Add chicken broth and pepper. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Season to taste with salt. If desired, garnish with parsley.
