How can you make turkey gravy when you deep fat fry the turkey?

You are right, you don’t get the nice drippings when this cooking method is used. Here is a recipe using canned broth (chicken or turkey broth will work). Enjoy!

No-Drippings Gravy

Start to Finish: 15 minutes

Makes: 3 cups

 

1/3 cup butter

1/3 cup all-purpose flour

3 cups chicken broth

1/4 teaspoon ground black pepper

  Coarse kosher salt or table salt

  Fresh parsley (optional)

1. In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Add chicken broth and pepper. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Season to taste with salt. If desired, garnish with parsley.

This should make a good gravy but I would cook the flour for about 2 minutes after adding it to the melted butter, it takes away that raw flour taste. Then add just a little broth and stir until smooth before adding the remainder of the broth, cook and stir until thick and bubbly.

A couple weeks before Thanksgiving when you can buy a really inexpensive turkey (usually if you spend $25 or more at the store, which is easy to do) I buy the smallest one I can find and make turkey stock (just exactly the same way you would make chicken stock). Then I reduce it by about 25%. Then freeze it. A few days before Thanksgiving I thaw it, and then use it to make gravy. It is a great way to make a very flavorful gravy WITHOUT any turkey drippings.
