What is a good recipe for cooking frosting/icing that lets me stack cookies to mail?
I love decorating Christmas cookies with my grandchildren but I find that the decorative icings I use do not allow me to stack the cookies to be sent home. Does anyone have a recipe for icing that is "stackable"? Thanks

Unfortunately no icing is invincible when stacked with other cookies, but Royal Icing is one that sets up well. Here is the recipe, good luck!


Royal Icing

Prep: 15 min.  

Makes: about 5 cups

This icing offers the perfect consistency for piping. For a thinner consistency, add more water 1 tablespoon at a time.


1 16-ounce package powdered sugar (3 1/4 cups)

3 tablespoons meringue powder (available among cake-decorating supplies at crafts stores)

1/2 teaspoon cream of tartar

1/2 cup warm water

1 teaspoon vanilla


1. In a large mixing bowl, combine powdered sugar, meringue powder, and cream of tartar. Add the water and vanilla. Beat with an electric mixer on low speed until combined; beat on high speed for 7 to 10 minutes or until mixture is very stiff. Cover bowl with a damp paper towel and plastic wrap; refrigerate for up to 2 days.
