What is a good recipe for Royal Icing?
which royal icing recipe is best? I have had problems some years with it not hardening & it doesn't shine. I use disposable bags, and all equipment is washed & cleaned with white vinegar. Should I use cream of tartar, & vanilla extract or not?

Sorry for all of your headaches with royal icing. Try our recipe, we've tested it and found it to work very well.


Royal Icing

Prep: 15 min.  

Makes: about 5 cups

This icing offers the perfect consistency for piping. For a thinner consistency, add more water 1 tablespoon at a time.



1 16-ounce package powdered sugar (3 1/4 cups)

3 tablespoons meringue powder (available among cake-decorating supplies at crafts stores)

1/2 teaspoon cream of tartar

1/2 cup warm water

1 teaspoon vanilla


1. In a large mixing bowl, combine powdered sugar, meringue powder, and cream of tartar. Add the water and vanilla. Beat with an electric mixer on low speed until combined; beat on high speed for 7 to 10 minutes or until mixture is very stiff. Cover bowl with a damp paper towel and plastic wrap; refrigerate for up to 2 days.
