When a recipe calls for nuts do I have to use them?
Can I omit nuts from say carrot cake and quick breads successfully? Or must I use a substitute like raisins?

In most instances you can omit stirring nuts into cake, bread, or cookie dough or batter with no problem. Some cakes use ground nuts for part of the flour, so in this case you would not be able to leave them out.
