The saucepan you use when making candy has a lot to do with the success or failure of your project. Choose a heavy-gauge pan with straight sides. Aluminum is the best heat conductor, so if shopping for a pan that is specifically for candy making, you will find hard anodized aluminum pans as well as stainless steel pans that have aluminum core on the market. Pans with nonstick coating work equally well, but make sure it is a heavy pan. Avoid glass, as it is not a good heat conductor.
