Harvest garlic (Allium) when the tops begin to dry and discolor naturally. This usually happens in late summer or early autumn. Dig rather than pull bulbs to avoid stem injury. Place the bulbs in a well-ventilated area to dry for several weeks. After the bulbs are dry, cut off the tops and roots to within an inch of the bulbs. Garlic will store well for 6-7 months once it is dried. It stores best at 32 F, but a 40 F refrigerator works well too. Bulbs form sprouts quickly at temperatures above 40 F.
