over wintered spinach

I had wonderful baby spinach last spring, and we cooked the later summer spinach. Much of it has over wintered and is growing again. Is the quality of the spinach going to be as good? It seems the leaves are not as delicate as they were last spring. Can I cut it back and have a better regrowth or should I just tear it out and start over?

Congratulations on overwintering your spinach. Cut the leaves back to the crown of the plant and enjoy the young tender leaves when they regrow. Many gardeners try this and can't do it!
