You'll have the best luck with "mature green" tomatoes. These are the ones with a whitish coloration on the blossom end of the tomato. Tomatoes should be free of blemishes. Best ripening occurs when temperatures are kept at 70-75 F. To speed ripening, you can place ripe bananas or apples with the tomatoes. These fruits give off ethylene gas, which promotes ripening. If you have lots of tomatoes, store them in a ventilated box one layer deep. To prolong storage, keep them in a cool, dark, humid room. Protect from direct sun.
