acorn squash

I would like to know when to pick our acorn squash i have heard when it falls of the vine but i dont know if thats what you go by, i would think that there would be a sign before that happens. We have gotten quite a few that are forest green in color but how do you know when they are done inside? Please help us out thanks Kevin and Bobbi

If the squash rind is hard enough that you cannot easily puncture it with your thumbnail, the squash should be mature enough to harvest. It may develop sweeter flavor leaving it on the vine longer, but if you'd like to start using it, you can at that stage.
