"Yellowing leaves could be an indication of either overwatering or underwatering. How much rain has fallen, and how regularly has it fallen. Newly planted trees need watering perhaps every other day until their roots expand into the surrounding soil. So they can dry out rather quickly. On the other hand, if it has rained a lot, the soil could be saturated and causing problems.
Also, how much mulch did you apply? It should be 2-4 inches deep and kept away from direct contact with the trunk. If mulch is deeper than that, it can restrict air in the soil and cause damage to the roots."
