Thanks for writing. The most organic method of controlling beetles is to pick them off the plants by hand and drop them into a bucket of soapy water. If you don't have the time to do that, you can try spraying with a product called Captain Jack's Deadbug Brew; it is organic and works pretty well. Insecticidal soaps (also available at your local garden center) are also considered organic.
One note: Organic doesn't always mean "safe" --- especially when you're looking for a spray to kill bugs/weeds/etc. So no matter what kind of product you use, be sure and follow the directions on the packaging carefully.
