what do I do with moss roses in the fall do you cut them back?

Thanks for writing. Because moss roses are annuals, the entire plant dies after frost. Most gardeners cut them back to the ground. But you can leave them in place; most of the stems and leaves should decompose over the winter and add to your soil's structure.
