Chilling hours usually refers to the number of hours of exposure to temperatures between 32 and 45 degrees F. Your local weather service and/or cooperative extension service should be able to help you determine how many hours of chilling to expect in your locale. The cooperative extension service also usually has lists of fruit varieties suited to your region.
