Annuals that deer and rabbits don't eat
There are few annuals that deer and rabbits leave alone. However you might try growing angel's trumpets (Datura and brugmansia) both of which are poisonous. If you have young children, avoid these however. California poppies, floss flower, forget-me-nots, pincushion flower, and ornamental grasses are usually left alone. All require sun. Perhaps use perennial ferns, astilbes and ornamental onions in shady places.
