You can use 1 tablespoon cider or red wine vinegar plus 1/2 teaspoon sugar to substitute for 1 tablespoon balsamic vinegar.

Two words: Grapeseed Oil. This oil has very little taste, but what taste there is, is light and clean, with none of the mustiness or heaviness of many oils. Grapeseed oil also has a very high smoke point, so it generates little to no carcinogens when used for cooking or baking. Another (but more expensive) alternative is roasted hazelnut oil, which is flavorful and substitutes well for butter in cooking. It is not recommended for baking.
