How long do I cook a 30-pound turkey?

I have a 30lb turkey from a farm. Last year I tried to cook a similar turkey by doing time per pound...it was way too long. Does anyone have any suggestions or times for me.

You'll need to cook your 30 lb turkey for 4.5-5 hours at 325 F. Be sure to use a meat thermometer to guage when your turkey is done - It should register 170° F in the breast and 180° F in the thigh.

As for cooking time. I preheat the oven to 450. I put a quartered lemon, garlic, a quartered onion and some fresh herbs in the cavity. I rub softened butter under the skin. Cover loosly with foil. Put in oven and after 15 minutes turn oven temp down to 350. Total cook time should be 5 hours. Don't forget to let it rest. It is very important..

I have been doing 28 -33 lb birds for several years. I have found that if I do not brine the turkey is guarenteed to be dry and unimpressive (other than looks). If I brine for 24 -48 hours, my turkey is moist and delicious. I have had lots of people oohing and aahing about how they never thought turkey could be so good.
