Why would a recipe call for unsalted butter?

Unsalted butter is often called for in recipes containing delicate vanilla, citrus, floral, and herbal flavors. However, in the Better Homes and Gardens Test Kitchen, we believe the flavor difference between items baked with salted and unsalted butter is minimal, so we use regular salted butter in all of our recipes.
