Stuffing out of a whole bird is always wetter than stuffing baked in a casserole. If you want your stuffing less wet, use less broth or water to toss with the bread crumb mixture. It also helps to start with dry or toasted bread cubes. Using butter to cook the vegetables before tossing with the bread cubes helps reduce gumminess of the stuffing.
