Which fruits and vegetables retain more nutrients after cooking—fresh, canned, or frozen?

Surprisingly, fresh, frozen, and canned fruits and vegetables weigh in almost equally in nutritional value.  

Because “fresh” produce may have been in transit and storage for up to two weeks—losing nutritional value along the way—its vitamin and mineral content is similar to canned or frozen produce, because canning and freezing occur almost immediately following harvest.
