Here are a few things to keep in mind:

  • Work the pizza dough quickly, dough shouldn't sit too long or be overworked.
  • If the dough is difficult to roll, let it rest for a few minutes, then continue rolling.
  • If using a pizza stone, place it in a hot oven to heat before slipping the pizza onto it.
  • If you don't have a baking stone, preheat a greased baking sheet in the oven for 5 minutes (do not preheat longer). 
  • Use plenty of flour on the pizza peel to allow the dough to easily slip from peel to pizza stone. Cornmeal is another option instead of flour; it also adds crunch to the crust.
  • Be inspired by pizzas prepared in Italy, but use local ingredients.

Pizza is best when cooked on a high temp. you can even cook crust then put toppings on and reheat to melt cheese. Pizza ovens cook at 500f or higher! Makes it crispy.
