The best way to get crispy, golden fried chicken is to make sure your cooking oil is the right temperature. If it is not hot enough, the chicken will absorb a lot of the oil as it cooks, resulting is soggy, greasy chicken. On the other hand, if your cooking oil is too hot, the chicken will burn on the outside before it gets a chance to thoroughly cook the inside. 350 degrees is the perfect temperature.
