What can I substitute for lemon or orange zest?

If you don't have lemon or orange zest,whats the substitution when using extract?

There is no “across the board” substitution, as it will depend what recipe you are referring to. But, for example, if you are making cookies and it calls for 1 teaspoon orange zest, you could try ½ teaspoon extract. Extracts can be strong, so I suggest using them sparingly to start with.

my recipe calls for 1C oil, can I substitute 1C of butter flavored crisco for the oil? I'm questioning this because one is a liquid and the other a solid. I would greatly appreciate your help. I have a cookbook of yours from over 20years ago and looked in that but couldn't find an ansewer. Thank you for your time ~ Susan
