Generally, skin color isn’t an indication of pineapple ripeness. First, look at leaves on the crown; they should be bright green, not dried or brown. Fruit should yield to light pressure and smell fragrant. Firm fruit will soften when left at room temperature for 2 to 4 days.

From the smell. If it smells ripe, it is! If it feels soft or squishy on the outside, it's overripe and/or rotten.
