How can I make moist cornbread?

how in the world can I make cornbread that is not so dry it chokes you when you eat it..I have tried

One thing that may help is to make sure you don't overstir/overbeat the batter when mixing the ingredients together. This recipe has yielded nice results for our readers:

Southern-Style Corn Bread


  • 2  cups  yellow cornmeal
  • 1  cup  all-purpose flour
  • 4  teaspoons  baking powder
  • 1/2  teaspoon  salt
  • 1-1/2  cups  buttermilk
  • 2    eggs
  • 1/3  cup  margarine or butter, melted


1. Stir together cornmeal, flour, baking powder, and salt in a mixing bowl. In another bowl lightly beat together buttermilk, eggs, and melted margarine or butter. Add to flour mixture and stir just until batter is smooth (do not overbeat). Pour into greased 9x9x2-inch baking pan. Bake in a 425 degree F oven for 25 to 30 minutes or until golden brown. Serve warm. Makes 8 or 9 servings.
