There are dozens of distinct style influenced by each region in Italy. Here are a few of the most common:

  • The North: Risotto, polenta, and gnocchi commonly upstage pasta; butter trumps olive oil; and cream sauces are pretty much the norm.
  • The Center: Local herbs, mushrooms, truffles, and cured meats enhance everything from stuffed pastas to hearty game dishes.
  • The South: Simple, rustic, healthful fare--think olive oil, beans, breads, pastas, seafood, tomato sauces, vegetable soups and sides--predominates. It's what gave rise to the Mediterranean diet.
