How do you cook pork chops so they are not tough?

Brine first. PORK BRINE: 2 C. Apple Cider Vinegar, 1/2 C. salt (sea salt is good), 1 C. Brown sugar, 1 T. pepper, 1 T. Mustard Powder. Boil in a saucepan to dissolve the brown sugar and salt as well as possible. Remove from heat. Add 1 tray of ice cubes. Cool 10 min. Put pork in zip-lock bag and pour brine over the top. Zip shut, forcing all air out. Refrigerate for 30 min. to a MAX of 2 hours. Rinse very well. Use a thermometer and favorite recipe. Repeat: MAX 2 hrs! Repeat: Rinse Very Well!
