Are cracked eggs safe to use or freeze?

Re: Accidentally cracked eggs. If recently cracked, safe to use? How can frozen/defrosted eggs be used. Separate yolks/whites? Can the whites successfully be used for pie meringues or meringue shells? Are frozen/defrosted hard boiled eggs usable? How long is it safe to use refrigerated hard boiled eggs for eating or in cooked recipe? Thank you. Susan Shelbyville, KY

If you cracked the egg you can still use it, simply pour the egg into a container, seal and store in the refrigerator up to 4 days. However, if you purchased eggs that were already cracked, do not use, throw them out. Separated egg whites can be safely frozen for 1 year, however separated egg yolks cannot be frozen. You can freeze whole eggs by beating the egg whites and yolks together and freezing in a sealed container--these will last up to 1 year.
