What is the difference between baking with unbleached vs. bleached flour?
Can unbleached all purpose flour be used in place of bleached all purpose flour in baking?
These can be used interchangeably. Milled flour will bleach, or turn whiter, on its own when allowed to stand exposed to air (unbleached flour). Because this takes time, bleaching agents are added to the flour to turn it whiter (bleached flour).
