Sometimes my shortbread dough feels too brittle. How can I soften it up?
Brittle shortbread dough usually results from the dough being too cold. Try removing the dough from the refrigerator about 10 minutes before you begin working with it. If the dough still seems brittle, knead the dough in your hands for a few minutes, allowing the heat from your hands to soften it up.
Then, once the dough is soft enough, shape it as you wish, then pop it into the refrigerator to cool it down again before baking.
