Evaporated milk—homogenized milk that has been cooked to reduce its water content by 60 percent—has a slightly caramelized flavor that is hard to duplicate, but these substitutions will work in most recipes:
• 2¼ cups whole milk, simmered gently in a saucepan until reduced to 1 cup. (This substitution will provide the flavor most similar to evaporated milk.)
• 1 cup whole milk
• 1 cup half-and-half
• 1 cup light whipping cream (30 percent fat)
