I think my candy thermometer is a bit off. Is there a way to test its accuracy?
You are wise to want to make sure that your candy thermometer is accurate—a thermometer that measures even a few degrees off may make the difference between perfect and not-so-perfect candy.
To test your thermometer, place it in boiling water for 10 minutes. If, at the end of that time, it does not read 212 degrees, cook the candy to a higher or lower temperature to account for the difference.
