How can we hide the chimney in our attic remodeling?

Either one of those ideas will work. If the mortar is protruding out on the existing joints, you may need to build walls around the chimney to install the sheetrock. If the joints are smooth, you can either use furring strips over the brick or just glue the sheetrock to the brick. If you install stone, it can usually be installed right over the brick.
