Thanks for writing. There aren't any plants you count on to be deer proof, but as a general rule, the critters avoid plants that have strongly scented foliage (basil, thyme, rosemary, sage, bee balm, yarrow, etc.), fuzzy or hairy foliage (lamb's ears, wooly thyme, etc.), or are quite poisonous (castor beans, hellebores, monkshood).
